🍪 Kurabie Cookies
Ingredients:
- 200 g softened butter (82% fat)
- 100 g powdered sugar
- 60 g egg whites (2 eggs)
- Zest of one lemon
- 300 g all-purpose flour
- A pinch of salt
- 100-150 g apple jam (3-4 tbsp, plum or quince jam can also be used)
Preparation:
- Beat the softened butter in a mixing bowl until it becomes lighter and increases in volume.
- Add powdered sugar and beat again until well combined.
- Warm the egg whites in the microwave for 10-15 seconds, then add them to the butter mixture and beat again.
- Mix in the lemon zest, flour, and salt. Stir on low speed until a smooth dough forms.
- Transfer the dough to a piping bag fitted with an 18 mm open star nozzle.
- Pipe the cookies onto a baking tray lined with parchment paper.
- Make small indentations in the center of each cookie using a dampened finger.
- Fill a piping bag with jam and pipe it into the center of each cookie.
- Bake in a preheated oven at 175°C (347°F) for 18-20 minutes.
