🍪 Kurabie Cookies


 

Ingredients:

  • 200 g softened butter (82% fat)
  • 100 g powdered sugar 
  • 60 g egg whites (2 eggs)
  • Zest of one lemon
  • 300 g all-purpose flour 
  • A pinch of salt
  • 100-150 g apple jam (3-4 tbsp, plum or quince jam can also be used)

Preparation:
  1. Beat the softened butter in a mixing bowl until it becomes lighter and increases in volume.
  2. Add powdered sugar and beat again until well combined.
  3. Warm the egg whites in the microwave for 10-15 seconds, then add them to the butter mixture and beat again.
  4. Mix in the lemon zest, flour, and salt. Stir on low speed until a smooth dough forms.
  5. Transfer the dough to a piping bag fitted with an 18 mm open star nozzle.
  6. Pipe the cookies onto a baking tray lined with parchment paper.
  7. Make small indentations in the center of each cookie using a dampened finger.
  8. Fill a piping bag with jam and pipe it into the center of each cookie.
  9. Bake in a preheated oven at 175°C (347°F) for 18-20 minutes.
